Levant
The “Levant” is a mild wind that blows in the Mediterranean and can be powerful when it collides with a change of relief. The Rosé Levant is intended to be consensual but not only. It is a Grand Vin de Provence marked by balance and a temperate power of minerality.
The vine is worked according to the lunar calendar and the harvest is done at night. Pressing is carried out immediately, before a light but necessary settling. The wine goes into fermentation and will remain in the tank a minimum of 8 months before bottling. We filter our wines at the time of “tirage” and add (if necessary) the strict minimum of SO2. The wines then develop a surprising potential for ageing (ranging from 3 to 5 years after the setting).
